The Ultimate Tasting Menu: Recipes & Pairings for an Unforgettable Wine and Whiskey Tasting Party

Introduction

One of the best parts of hosting a tasting party is watching guests discover unexpected pairings. While the wines and whiskeys may be the stars of the evening, the right appetizers and desserts elevate the entire experience.


After hosting my own Red, White & Whiskey tasting, I can confidently say that simple recipes paired thoughtfully with each pour create a relaxed, memorable evening your guests will talk about long after the last glass is empty.


Below is The Ultimate Tasting Menu—including the recipes, wine pairings, and a few notes about what I'd make again.


🥂 White Wine Pairings

Caprese and cantaloupe with prosciutto skewers

Santa Margherita Prosecco DOCG

Prosciutto & Melon Skewers and Caprese Skewers

Why it works

The crisp bubbles of the Prosecco balance the saltiness of the prosciutto while enhancing the sweetness of ripe cantaloupe.

Ingredients

  • Cantaloupe

  • Prosciutto

  • Fresh mozzarella pearls

  • Cherry tomatoes

  • Fresh basil

  • Balsamic glaze

Assembly

Alternate ingredients on skewers and drizzle lightly with balsamic glaze just before serving.


Goat cheese balls

L'Etincelle Sancerre

Fried Goat Cheese Balls ⭐ Guest Favorite

Why it works

Tangy goat cheese and bright Sancerre are a match made in heaven.

Ingredients

  • 8 oz. Plain Goat cheese

  • ¾ cup Panko breadcrumbs (I used Pork panko for a gluten free option)

  • 1 T. Italian Seasoning

  • 3 T. All Purpose Flour (I used gluten free)

  • 1 Egg

  • Hot Honey

  • Flakey Sea Salt or Kosher Salt

Instructions

  1. Roll chilled goat cheese into balls. (8 oz. makes 20 balls)

  2. Combine panko and Italian seasoning

  3. Coat in flour

  4. Dip in egg

  5. Roll in panko mix.

  6. Freeze for 20–30 minutes.

  7. Air fry or fry in a neutral until golden.

  8. Sprinkle with a tiny bit of sea or Kosher salt flakes

  9. Drizzle with hot honey

Host's Note

⭐ These were the surprise favorite of the evening. If I hosted this tasting again, I'd make extra because they disappeared quickly!

Spinach and Artichoke cups

Zaccagnini Pinot Grigio

Mini Spinach Artichoke Phyllo Cups

Why it works

Creamy filling meets the crisp acidity of Pinot Grigio.

Ingredients

  • 1 (8 ounce) package cream cheese, softened

  • ¼ cup mayonnaise

  • ¼ cup grated Parmesan cheese

  • ¼ cup grated Romano cheese

  • 1 clove garlic, peeled and minced

  • ½ teaspoon dried basil

  • ¼ teaspoon garlic salt

  • salt and pepper to taste

  • 1 (14 ounce) can artichoke hearts, drained and chopped

  • ½ cup frozen chopped spinach, thawed and drained

  • ¼ cup shredded mozzarella cheese

  • Phyllo Cups

Instructions

  1. Preheat the oven to 350 degrees F. Lightly grease a small baking dish.

  2. Mix cream cheese, mayonnaise, Parmesan cheese, Romano cheese, garlic, basil, garlic salt, salt, and pepper together in a medium bowl. Gently stir in artichoke hearts and spinach.

  3. Fill a phyllo cup with mixture

  4. Top each cup with mozzarella cheese. Bake in the preheated oven until bubbly and lightly browned, about 15 minutes.


Shrimp Scampi Crostini

Shrimp Scampi Crostini

Why it works

Albariño's citrus and minerality pair beautifully with garlic butter shrimp.

Ingredients

  • 35 Large Shrimp (raw and deveined without tail)

  • 1 stick of butter

  • ½ teaspoon Crushed red pepper

  • 1 teaspoon Italian Seasoning

  • 3 cloves of garlic finely diced

  • ¼ cup shredded Parmesan cheese

  • Juice of ½ lemon

  • Crostini

Instructions

  1. Preheat the oven to 350 degrees

  2. Melt butter and place in baking dish

  3. Add garlic, red pepper flakes, Italian seasoning, and parmesan cheese

  4. Arrange Shrimp in even layer

  5. Bake for 20 min

  6. Serve with Crostini


    Beef and Cheese Empanadas

🍷 Red Wine Pairings

Beef & Cheese Empanadas

Ingredients

Instructions

  1. Preheat oven to 350°.

  2. In a frying pan, add ground beef, chopped onions, minced garlic and cook over medium heat until ground beef is no longer pink. Drain grease and return to pan.

  3. Sprinkle with seasonings, stir. 

  4. Add tomato paste and diced chilis, stir and let simmer for 15 minutes.

  5. Unroll pie crust on a lightly flour surface. Using a 4 inch bowl, turn bowl upside down and press down to cut dough. Should be able to get 4 pieces per pie crust.

  6. Add a little water to the edges of the dough before filling to help seal.

  7. Add a small amount of shredded cheese and about a ¼ cup of meat mixture.

  8. Fold dough over and using a fork, close up the edges by pressing to seal and place on a baking sheet.

  9. In a small bowl, whisk egg and one tablespoon of water together. Using a basting brush, brush egg wash over the top of each empanada. 

  10. Bake for 15 minutes or until empanada crust is golden brown.

  11. Serve

Host's Note

While these were delicious, they weren't quite the crowd favorite I expected. If I hosted again, I might experiment with another Spanish-inspired appetizer.


Bacon Smoked Gouda Dip with Crostinis

Eccentric Bourbon Barrel Aged Malbec

Smoked Gouda Bacon Dip

Why it works

Rich, smoky flavors complement the bourbon notes in the Malbec.

Ingredients

  • 8 ounces packages of cream cheese

  • ½ cup mayonnaise

  • ½ cup sour cream

  • 8 ounces smoked gouda, shredded, divided

  • ½ pound bacon, cooked and chopped (see notes), divided

  • 2 scallions, chopped, divided

  • Freshly ground black pepper to taste

Instructions

  1. Preheat the oven to 400 degrees F.

  2. In a large bowl, add the cream cheese and microwave for 30 seconds or until softened and easy to stir. Then, add the mayo and sour cream and whisk until smooth. The mixture should be creamy but not liquidy.

  3. Reserve 1/3 cup of the shredded cheese, 1/4 cup of the chopped bacon and 2 tablespoons of the chopped scallions for later. Add the remaining cheese, bacon, scallions and black pepper to the cream cheese mixture and stir to combine.

  4. Transfer the dip to a baking dish, top with the reserved cheese and bacon and bake for 30 minutes .

  5. Remove from Oven and top with the scallions.

  6. Serve.


Roast Beef Crostini

Roast Beef Crostini with Horseradish Cream

Ingredients

  • ¼ cup mayo

  • ¼ cup sour cream

  • 1 tablespoon horseradish

  • 3 teaspoons Dijon Mustard

  • French Baguette

  • Extra virgin olive oil

  • ½ pound deli Roast Beef, thinly sliced

  • Micro greens

  • Capers

Instructions

  1. Preheat oven to 350 degrees. Arrange your baguette slices on a large baking sheets; drizzle both with olive oil, and season with salt

  2. Bake until golden, 10 to 15 minutes

  3. Mix mayo, sour cream, horseradish, and dijon mustard in a small bowl.

  4. Spread a tablespoon of the horseradish dijon onto a toast.

  5. Top with a slice of roast beef.  

  6. Top with a few capers and some micro greens  



Goldeneye Pinot Noir

Italian Meatballs

Ingredients

  • 1 lb ground beef (80/20)

  • 1 lb ground pork

  • 1 cup breadcrumbs (plain or Italian, panko for a lighter texture)

  • ½ cup grated Parmesan cheese

  • ¼ cup chopped fresh parsley (or 2 tbsp dried)

  • 2 cloves garlic, minced (or 1 tsp garlic powder)

  • 1 large egg

  • 1 tsp salt

  • ½ teaspoon black pepper

  • ½ teaspoon Italian seasoning

  • 1 cup marinara sauce

Instructions

  1. Preheat your oven to 400°F .

  2. Combine the breadcrumbs and Parmesan in a large bowl.

  3. Add the ground beef, ground pork, chopped parsley, minced garlic, egg, salt, pepper, and Italian seasoning.

  4. Mix gently with your hands or a fork until everything is just combined.

  5. Shape the mixture into meatballs about 1.5 inches in diameter.

  6. Place the formed meatballs on a baking sheet lined with parchment or a lightly greased rimmed pan.

  7. Bake at 400°F for 20–25 minutes, until the meatballs reach an internal temperature of 160°F (71°C).

Chocolate Cake

Flourless Chocolate Cake

Ingredients

Glaze

  • 1 cup semisweet chocolate chips

  • ½ cup heavy cream

  • Preheat the oven to 375°F. Lightly grease a metal 8" round cake pan; cut a piece of parchment to fit, grease it, and lay it in the bottom of the pan.

Instructions

To make the cake:

  1. Put the chocolate and butter in a microwave-safe bowl, and heat until the butter is melted and the chips are soft. Stir until the chips melt, reheating briefly if necessary. You can also do this over a burner set at very low heat. Transfer the melted chocolate/butter to a mixing bowl.

  2. Stir in the sugar, salt, espresso powder, and vanilla.

  3. Add the eggs, beating briefly until smooth. Add the cocoa powder, and mix just to combine.

  4. Spoon the batter into the pan.

  5. Bake the cake for 25 minutes; the top will have formed a thin crust,

  6. Remove it from the oven, and cool it in the pan for 5 minutes.

  7. Loosen the edges of the pan with a table knife or dull knife, and turn it out onto a serving plate. The top will now be on the bottom; that's fine. Also, the edges will crumble a bit, which is also fine. Allow the cake to cool completely before glazing.

To make the glaze:

  1.  Place the chocolate in a heatproof bowl. Heat the cream until it's not quite at a simmer, but showing fine bubbles around the edge.

  2. Pour the cream over the chocolate, stir very briefly to combine, and let rest for 5 minutes.

  3. Spoon the glaze over the cake, spreading it to drip over the sides a bit. Allow the glaze to set for several hours before serving the cake.

Peach Cobbler

Ingredients

  • 6 cups fresh peaches, peeled and sliced

  • 1 cup granulated sugar (for peaches)

  • ¼ cup water

  • 1 tablespoon fresh lemon juice

  • ½ cup unsalted butter

  • 1½ cups all-purpose flour

  • 1 cup granulated sugar (for batter)

  • 2 teaspoons baking powder

  • ½ teaspoon salt

  • 1 cup whole milk

  • 1 teaspoon pure vanilla extract

  • ½ teaspoon ground cinnamon

Instructions

Preheat Oven to 350 degrees


For the Peaches:

  1. In a large bowl, combine the sliced peaches with 1 cup of granulated sugar, water, and lemon juice. Stir to coat the peaches and let them sit for about 10 minutes.

  2. While the peaches are resting, melt the butter in a baking dish in the preheated oven


For the Batter:

  1. In another bowl, mix together the flour, 1 cup of sugar, baking powder, and salt.

  2. Gradually stir in the milk and vanilla extract until just combined.


Assembly:

  1. Pour the batter over the melted butter in the baking dish. Do not stir.

  2. Spoon the peach mixture over the batter, including the juice. Again, do not stir.

  3. Sprinkle with cinnamon to taste.

  4. Bake for 30-35 minutes or until the top is golden brown and the peaches are bubbly.

  5. Serve warm and enjoy


Salted Carmel Apple Bar

Salted Caramel Apple Crumble Bars

Ingredients

For the Crumble Base and Topping:

  • 1 ½ cups all-purpose flour

  • 1 ½ cups old-fashioned rolled oats

  • ¾ cup light brown sugar, packed

  • ½ teaspoon ground cinnamon

  • ¼ teaspoon salt

  • ¾ cup unsalted butter, melted


For the Apple Filling:

  • 3 medium apples, peeled, cored, and diced

  • 2 tablespoons granulated sugar

  • 1 teaspoon ground cinnamon

  • 1 teaspoon cornstarch

  • 1 teaspoon lemon juice


For the Salted Caramel Sauce:

  • ½ cup granulated sugar

  • 3 tablespoons unsalted butter

  • ¼ cup heavy cream

  • ½ teaspoon sea salt


Instructions

Step 1: Prepare the Crumble MixtureIn a large bowl, mix together flour, oats, brown sugar, cinnamon, and salt. Pour in the melted butter and stir until crumbly. The mixture should resemble damp sand but still clump when pinched.

Cooking& Recipes

Step 2: Create the Base LayerPress about two-thirds of the crumble mixture into a parchment-lined 8×8-inch baking pan. Press it down firmly to form a solid base. Bake at 350°F for 10 minutes, then set aside to cool slightly.

Step 3: Make the Apple FillingIn a medium bowl, toss the diced apples with sugar, cinnamon, cornstarch, and lemon juice until well coated. Spread the apple mixture evenly over the baked base.

Step 4: Make the Salted Caramel SauceIn a saucepan over medium heat, melt the sugar, stirring constantly until it turns a deep amber color. Remove from heat and whisk in the butter, then the heavy cream. Add the sea salt and stir until smooth. Let cool for a few minutes before drizzling half of it over the apple layer.


What I'd Do Again

✔️ Keep the progressive tasting format.

✔️ Pair one wine with one appetizer.

✔️ Play music throughout the evening.

✔️ Keep pours small.

✔️ Allow plenty of time for conversation.


What I'd Change

Hosting always teaches us something.

If I hosted another Red, White & Whiskey evening, I would:

  • Make twice as many goat cheese balls.

  • Replace the beef empanadas with another Spanish-inspired bite.

  • Continue serving the food in waves rather than all at once. Guests loved anticipating each new pairing, and it kept the evening relaxed.

Hosting Tips

  • Prep as much as possible the day before.

  • Label wines in serving order.

  • Keep pours to 2–3 ounces.

  • Print pairing cards for guests.

  • Create a playlist that evolves with the evening.

  • Most importantly, enjoy your guests. They won't remember if everything was perfect—they'll remember how welcome they felt.
