Lemon Herb Salmon & White Linen Cocktails
There is something about summer evenings that makes us want to slow down a little. The longer daylight, warm air, glowing candles, fresh herbs from the garden, and the sound of conversation around the table all seem to invite us to pause and savor the moment.
Lately, I have been trying to embrace slower evenings at home and create more intentional moments around the table. Not every gathering needs to be elaborate or expensive to feel special. Sometimes a beautiful meal, a refreshing cocktail, and a softly lit patio are enough to create a memory.
This Lemon Herb Salmon with the White Linen Cocktail quickly became one of my favorite summer combinations. The salmon is light, fresh, and flavorful, while the creamy dill yogurt sauce adds the perfect bright and herb filled finish. Paired with roasted baby potatoes, fresh green beans, and a crisp cucumber elderflower cocktail, this dinner feels elevated while still being simple enough for an easy summer evening at home.

Lemon Herb Salmon with Creamy Dill Yogurt Sauce
A light and fresh summer dinner that pairs beautifully with the White Linen Cocktail.
Ingredients
For the Salmon
4 salmon fillets
2 tbsp olive oil
1 lemon, sliced
2 cloves garlic, minced
2 tsp Dijon mustard
2 tsp honey
2 tsp dried parsley
1 tsp dried oregano
Salt and pepper, to taste
Juice of 1/2 a lemon
For the Dill Yogurt Sauce
1 cup plain Greek yogurt
2 tbsp fresh dill, chopped
1 tbsp fresh lemon juice
1 tsp lemon zest
1 small garlic clove, grated
Salt and pepper, to taste
Optional Serving Ideas
Roasted baby potatoes
Green beans
Cucumber salad
Lemon rice
Mixed greens with vinaigrette
Instructions
Step 1: Prepare the Salmon
Preheat oven to 400°F.
In a small bowl, whisk together:
olive oil
garlic
Dijon mustard
honey
parsley
oregano
salt and pepper
juice of 1/2 a lemon
Place salmon fillets in baking dish. Brush generously with the lemon herb mixture and top each fillet with lemon slices.
Bake for 15–20 minutes, or until salmon flakes easily with a fork.
Step 2: Make the Dill Yogurt Sauce
In a bowl, combine:
Greek yogurt
fresh dill
lemon juice
lemon zest
grated garlic
salt and pepper
Stir until smooth and refrigerate until ready to serve.
Step 3: Assemble
Serve salmon warm with a generous spoonful of dill yogurt sauce over the top.
Pair with roasted potatoes, green beans, or a fresh summer salad for the perfect seasonal dinner.

White Linen Cocktail
Light, crisp, refreshing, and perfect for slow summer evenings.
Ingredients
1 ½ oz gin (Hendrick’s recommended)
¾ oz elderflower liqueur
1 oz fresh lemon juice
½ oz simple syrup
2–4 cucumber slices
Club soda, to top
Cucumber ribbons (English cucumber recommended)
Ice
Lemon slice, for garnish
Instructions
Step 1
Using a Y-peeler, peel 2–3 long cucumber ribbons. Line the inside of your glass with the ribbons, then fill the glass with ice.
Step 2
In a cocktail shaker, add the cucumber slices and simple syrup. Gently muddle to release the cucumber flavor.
Step 3
Fill the shaker with ice. Add the lemon juice, gin, and elderflower liqueur. Shake vigorously until well chilled and combined.
Step 4
Strain the mixture into the prepared glass.
Step 5
Top with club soda and gently stir.
Step 6
Garnish with a lemon slice and a rolled cucumber ribbon secured with a toothpick.
