Classic Potato Salad

Ingredients

  • 6 potatoes

  • 3 boiled eggs, diced

  • ¼ white or yellow onion, diced

  • 1 cup mayonnaise

  • ½ teaspoon celery salt

  • ¼ cup dill pickle relish


Instructions

  1. Peel the potatoes and cut them into 1-inch cubes.

  2. Place the potatoes into a large pot and cover with water.

  3. Bring to a boil and cook until the potatoes are fork tender.

  4. While the potatoes are cooking, combine the diced eggs, onion, mayonnaise, celery salt, and dill pickle relish in a large bowl.

  5. Drain the cooked potatoes and allow them to cool slightly.

  6. Add the potatoes to the mayonnaise mixture and gently stir until combined.

  7. Cover and refrigerate for approximately 4 hours before serving.


Serving Size

Serves 6–8


Cozy Tip

For extra flavor, sprinkle a little paprika on top before serving and chill overnight for the best texture and taste.
